Raw vegan apricot bars

Its always nice to have some healthy, guilt-free snacks in the house. The kids are always hungry when they get home from school, and we all like to have just a little something sweet after dinner. Dried apricots happen to be high in iron, fibre, potassium and antioxidants, and they taste pretty sweet too! So it was about time I made some more apricot bars again. The last batch I did in the dehydrator but I wanted something more chewy and less crispy this time!

I made mine with cashew nuts but you could use almonds too. Keep them in the fridge as they seem to hold their shape better and it makes them really chewy!

Recipe for Raw Apricot Bars

  • 3/4 cup dessicated coconut 
  • 2 cups raw cashews
  • 1 1/2 cups dried apricots
  • 2 tablespoons coconut oil
  • 1/2 teaspoon of cinnamon

In your food processor, blend the dried apricots with the coconut oil until it forms a pasty consistency. Then add in the nuts and blend until very finely chopped. Add in the coconut and cinnamon and pulse until combined and clumped together.

With a spatula scrape out all the mixture into a lined container. It may seem crumbly but press the mixture down firmly until the surface is even. Place in the freezer (or fridge if you have no space!) and let chill till firm. Turn out onto a cutting board and slice into bars, or squares if you prefer. Store in fridge or freezer for best eating yumminess!
