Piña Kale-ada Smoothie
Kale has been hailed as one of the world's healthiest foods, bursting with vitamin A, vitamin C, vitamin K, vitamin B6, folate, and manganese. Kale is a good source of vitamin E and several dietary minerals, including iron, calcium, potassium, and phosphorus.
I have to admit, I took a long time to jump on the kale bandwagon, I used to find its flavour quite grassy and I found myself eating it just for its health benefits, but rather begrudgingly.
However, I have found that by adding it into curries or smoothies with other stronger flavours makes this superfood much more palatable.
I discovered a really yummy smoothie that I had to share, its a green smoothie, but not one that tastes too 'healthy'... This smoothie has a real tropical flavour, due to the pineapple, coconut milk and lime juice. It could easily pass as a non-alcoholic piña colada. Hence the Piña Kale-ada Smoothie was born!
Piña Kale-ada Smoothie
1 cup chopped pineapple
1 large kale leaf, tough rib removed, then chopped
juice of half a lime
chilled coconut milk
Pop all the ingredients into blender and top up with coconut milk, blend and enjoy!
