Overnight Oats

I don't know about you, but mornings are always a rush for me. Trying to pack lunches for the kids, get them dressed and making their breakfasts, I sometimes don't get time to feed myself and might just grab an apple or banana when I'm heading out the door (usually yelling at the kids to get their shoes on!).
I have made overnight oats in the past but not done so in a while and I have decided to make a point of getting more organised. By making my breakfast the night before, I can easily just grab it out the fridge in the morning and either munch on it while making sandwiches for the kids or just take it with me and eat it wherever I'm off to. Mr Kai Box likes to take his with him to work (and possibly boast about how awesome Mrs Kai Box is for making him this fab breakfast!)
So I made some today, ready for tomorrow and I'm really quite excited to eat it!
I made one for myself with blueberries, chia seeds and almond milk. The other one is banana with peanut butter and coconut milk. These two were pretty basic ones, you can add heaps of different things to them to add flavour. Different seasonal fruit, dried fruit, cacao nibs, nuts, seeds, cinnamon, vanilla etc.
So here is the basic recipe:
Overnight Oats
1 cup rolled oats
1 TBs chia seeds
1 cup non-dairy milk (we like almond and coconut)
1/2 cup fruit of your choice (if using bananas, you may want to slice these up on the day you eat them as they may go brown)
1/2 TBs maple or date syryp
In a glass jar with a screw top lid, pour in your oats. Then add chia seeds, give them a stir in the jar. Then add your milk, syrup and top with fruit of choice.
Leave in fridge overnight. In the morning you may want to add some more milk as the oats will absorb most of the milk. Then grab a spoon and off you go!
