Chia & Hemp Seed Pudding
You may have had overnight oats before (bircher muesli), and this is a similar way of preparing this easy and nutritious breakfast. It's basically soaking seeds overnight in your favourite plant milk to let it thicken and in the morning all you need to do it top with fruit and optional extra nuts and serve!
It's a Chia Seed and Hemp pudding, which makes it lower in carbs and high in protein. It also contains healthy fats which is good for helping you feel satiated. It's also high in fiber which helps with blood sugar control, cholesterol levels and gut health. Top with your favourite summer fruit; berries are always a good option. And add a dollop of coconut yoghurt if you like!
Ingredients:
  • 2 TBs chia seeds
  • 2 TBs hemp hearts/seeds
  • 1 TBs coconut threads
  • 1 TBs sliced almonds
  • ¼ tsp stevia or 1 tsp maple syrup
  • ¼ tsp vanilla extract
  • ½ cup coconut or almond milk
    • handful of raspberries
    • optional dollop of coconut yoghurt 
      Instructions:
      1.   Combine all ingredients together in a bowl except for the raspberries and coconut yoghurt.
      2.   Cover then leave overnight to thicken. Add raspberries and coconut yoghurt just before serving.
