This Moroccan flavoured dish has shredded jackfruit, carrots, chickpeas and chopped dried apricots, in a tomato based sauce, with fresh herbs including mint and coriander, served with a side of whole-wheat couscous (quinoa for gluten free).
Meal 4 - Lentil Casserole
Brown lentils with courgettes, carrots, celery and potatoes, in a herby tomato gravy, served with a side of fluffy bulgur wheat (or millet for gluten free).
